Sautéed Green Beans

As an alternative to green beans, try this recipe with snow peas or asparagus.

INGREDIENTS:

  • 2 strips bacon 3/4 lb. green beans, trimmed 
  • 1/2 cup low-sodium chicken broth 
  • Kosher salt and black pepper to taste 
  • Juice of 1/2 lemon 
  • 1/4 cup chopped walnuts
INSTRUCTIONS:

  1. Cook bacon in a sauté pan over medium-high heat until crisp, about 5 minutes. Remove bacon to a paper-towel-lined plate, keeping 1 Tbsp. bacon drippings in pan. Add beans to pan; sauté for 1–2 minutes.
  2. Add broth; simmer, covered, until beans are crisp- tender, about 10 minutes.
  3. Season beans with salt, pepper, and lemon juice. Toss beans with walnuts and crumbled cooked bacon before serving.
