Quick & Easy Gourmet: Sunrise Oatmeal

Sunrise Oatmeal

Enjoy this recipe down by the water’s edge knowing that there is little clean- up awaiting you. Serves 4.
  • 3 ½ cups skim milk
  • ¼ cup chopped dried apricots
  • ¼ cup raisins
  • ¼ cup agave syrup
  • ½ teaspoon cinnamon
  • 1 teaspoon pure vanilla
  • 2 cups quick-cook oatmeal
? Combine milk, apricots, raisins, agave and cinnamon in a medium size saucepan and bring to a slow boil.

? Quickly reduce heat to med/low and stir in oats. Stir until the liquid is just absorbed.

? Remove saucepan from heat and gently mix in vanilla. Do not over-mix as oatmeal can become tough and sticky.

? Garnish with additional agave and chopped apricots, if desired.
