INGREDIENTS
- 1 package yakisoba or ramen noodles (7.7 oz.)
- 1 cup sugar snap peas, blanched
- 1/2 cup red onion, slivered
- 1/2 cup carrot, sliced into thin strips
- 1/2 cup red bell pepper, sliced into thin strips
- 1/2 cup fresh bean sprouts, rinsed
- 2 T. fresh cilantro leaves
- 1/2 cup reserved marinade, left
- Chopped cashews
INSTRUCTIONS
Prepare noodles according to package directions, omitting seasoning packet (if included). Drain; let cool in a large bowl. Combine noodles with remaining ingredients (except cashews) and toss to coat with marinade. Sprinkle cashews on salad before serving.
