Grilled Blue Cheese and Beef Sandwiches
Buy thin-sliced roast beef from the deli and pile it high on these hearty sandwiches. If you have ripe, tasty tomatoes, a few slices on each sandwich take these over the top. Makes 4 sandwiches.
? In a small bowl, mix together the blue cheese, cream cheese (or mayo), chives and horseradish. If needed, add a tablespoon or two of milk to get a smooth, spreadable mix.
? Brush the bread lightly with olive oil on both sides and grill over a high flame for a few minutes, until golden brown and lightly charred with grill marks. (Try not to move it too much, flipping only once.)
? Moving quickly, spread the hot bread thickly with the blue cheese sauce and pile on the roast beef as high as you like. Drizzle with more sauce and top with another piece of bread. Slice in half and serve at once.

- ½ cup cream cheese or mayonnaise
- Chopped chives or thinly sliced scallion
- 1 tablespoon horseradish
- 2 tablespoons milk (optional)
