There’s no time for fussy sauces when a crowd is getting hungry. Use bottled barbeque sauce, or try this simple blend. Serves 15.
? Preheat a gas grill on high with the lid closed, for 10 minutes. Sprinkle the wings liberally with salt and pepper. Blend the preserves and soy sauce in a medium bowl and set it aside.
? Reduce the gas to medium and arrange the wings on the grill rack. Tend them for an hour or more, drinking beer and chatting, turning the wings and moving them around, until they’re crisp and browned and crunchy.
? When they look done, use a brush to spread the apricot mixture over the wings. Continue to cook for 5 minutes, turning and brushing, until they’re well glazed.
? Serve warm or at room temperature.
