Ingredients
- 3 strips thick-sliced bacon, diced
- 1 cup onion, diced
- 1/4 cup bourbon
- 2 cans red beans, drained, rinsed (15 oz. each)
- 1 cup tomatoes, chopped
- 1/4 cup ketchup
- 2 tablespoons Worcestershire sauce
- 2 tablespoons brown sugar
- 1 tablespoon molasses
- 1 tablespoons prepared yellow mustard
- 1 teaspoon Tabasco
- Red and/or green bell pepper, minced
Instructions
- Saute bacon in a large saute pan over medium heat until crisp. Add onion and cook until softened, 3–4 minutes.
- Off heat, deglaze with bourbon. Return pan to burner and simmer until bourbon is nearly evaporated.
- Stir in remaining ingredients (except bell pepper), bring to a boil, reduce heat to medium-low, and cook 5 minutes.
- Garnish beans with bell pepper before serving.
