Sun-Dried Tomato Butter

This sun-dried tomato butter is sure to give any dish a flavor boost. You'll never use regular butter again!

Makes 1/4 cup
Total time: 10 minutes + chilling
  • 1/2 stick unsalted butter, room temperature (4 T.)
  • 2 T. sun-dried tomatoes, minced
  • 1 T. minced fresh basil
  • 1 t. garlic, minced
Mash all ingredients in a bowl using a fork until blended. Mound mixture onto a piece of plastic wrap and roll plastic around butter, forming a tight cylinder about 3" in diameter. Tightly twist ends of plastic and chill until firm. May be frozen for up to 1 month.
