Grilled Corn on the Cob

Grilled corn has a very distinct “campfire” flavor. Doused with spicy lime butter, this will be one of the season’s favorites.

Makes: 16 pieces
Total time: 20 minutes
 
 
Ingredients:
  • 8 ears fresh sweet corn, shucked, halved
  • 1 stick unsalted butter, melted
  • 2 T. chopped fresh cilantro
  • 2 t. fresh lime juice
  • 1/8 t. cayenne
  • Salt to taste
Instructions: 
  1. Preheat grill to medium-high.
  2. Grill corn, turning often, until kernels begin to char, 10 minutes; transfer to a large bowl.
  3. Combine butter, cilantro, lime juice, cayenne, and salt, and drizzle over corn.

Turn the ears frequently during grilling. You’re looking for browning in spots, not scorching.
