Chipotle-Maple Black Beans

INGREDIENTS
  • 1 cup onion, diced
  • 1 T. vegetable oil
  • 1 t. garlic, minced
  • 2 T. apple cider vinegar
  • 2 cans black beans, drained, rinsed (15 oz. each)
  • 1/2 cup maple syrup
  • 1/2 ketchup
  • 2 T. chipotle chiles in adobo, minced
  • 1 t. dry mustard
  • 1 t. Worcestershire sauce
  • Salt to taste
 
INGREDIENTS
Saute onion in oil in a large saute pan over medium heat until softened, about 3 minutes. Stir in garlic and cook 1 minute. Deglaze with vinegar and bring to a boil. Add remaining ingredients and simmer 10 minutes.
